Executive Chinese Chef

About the role

Mandarin Oriental, Hong Kong is seeking an Executive Chinese Chef to lead the culinary vision of Man Wah Restaurant and Chinese Banqueting. Reporting to the Executive Chef, you will uphold exceptional Cantonese dining standards and contribute to the hotel’s strategic direction.

Key responsibilities

• Implement operating policies for Man Wah Restaurant and Chinese Banqueting.
• Formulate direction and guidelines for Chinese cuisine, monitor food cost and quality to maintain gross margin.
• Establish kitchen management policies, supervise daily kitchen operations and HACCP compliance.
• Collect customer feedback and market trends to create and launch seasonal dishes.
• Host daily kitchen meetings to align staff with hotel policies and guest expectations.
• Review equipment usage and develop annual purchase plans.

Required profile

• 8‑10 years of relevant Chinese culinary experience, with 3‑5 years in a senior leadership role, preferably in a luxury hotel or Michelin‑starred venue.
• Proven track record of leading high‑end Chinese restaurants and achieving or maintaining Michelin star status.
• Professional culinary qualifications or certifications in Chinese cuisine.
• Strong expertise in menu development, quality control, cost management, and consistent kitchen operations.
• Excellent communication, collaborative mindset, and fluency in Cantonese and Mandarin (English preferred).
