Commis III – Kitchen Assistant

About the role

The Desert Islands Resort & Spa by Anantara is seeking a motivated Commis III to join its culinary team. This on‑site position supports daily kitchen operations, ensuring high‑quality food preparation and strict adherence to safety standards.

Key responsibilities

• Stock the kitchen with raw materials and ingredients each day.
• Operate all electrical and mechanical kitchen equipment safely.
• Execute basic cooking techniques, including ingredient cutting and mise‑en‑place preparation for assigned stations.
• Prepare dishes according to standard recipe cards while controlling portions and minimizing waste.
• Apply HACCP food safety and hygiene standards throughout all tasks.
• Clean and maintain kitchen equipment and production areas.
• Report any hazards, unsafe conditions, or equipment issues to the supervisor promptly.
• Follow hotel fire and life‑safety/emergency procedures.
• Attend briefings, meetings, and training sessions as required.
• Maintain a high standard of personal appearance and hygiene.
• Perform other reasonable duties assigned by management.

Required profile

• Experience working in a hotel or resort kitchen environment.
• Familiarity with kitchen safety protocols and HACCP guidelines.
• Ability to work efficiently in a fast‑paced, team‑oriented setting.
• Strong attention to detail and commitment to cleanliness.
