Assistant Sommelier – Fine Dining Restaurant

About the role

The Assistant Sommelier will support the wine program at Tin Lung Heen, a Michelin‑starred restaurant located in the International Commerce Centre, Hong Kong. Working closely with the head sommelier and service team, you will help deliver an exceptional wine experience to guests.

Key responsibilities

• Answer guest inquiries about wine origin, vintage, and style, and recommend pairings that complement menu items.
• Create, update and maintain the wine list, ensuring accurate descriptions and pricing.
• Attend wine tastings, develop relationships with vendors, and request new wines and products.
• Design and implement wine promotions and incentive programs.
• Monitor and replenish wine cellar inventory, equipment, and glassware; conduct FIFO checks and regular stock takes.
• Conduct staff wine tastings and training sessions.
• Perform opening and closing duties, including setup, cleaning, securing storage areas, and completing work orders.
• Serve wine and champagne bottles, follow responsible service laws, and maintain accurate spill records.
• Assist management with hiring, training, scheduling, and performance coaching.

Required profile

• Strong communication skills and a team‑oriented attitude.
• Ability to stand, walk or sit for extended periods and lift objects up to 50 lb.
• Attention to detail and commitment to cleanliness and organization.
• Professional appearance and ability to maintain confidentiality.
