Captain - All Day Dining

About the role

We are seeking a proactive Captain to lead the All Day Dining operations at Mandarin Oriental The Landmark in Hong Kong. Reporting to the F&B Manager, you will support daily restaurant activities, ensure high service standards and contribute to guest satisfaction.

Key responsibilities

• Conduct daily hygiene and cleaning inspections throughout the restaurant.
• Prepare breakfast buffets, lunch, and high‑tea table settings according to procedures and reservations.
• Maintain restaurant cleanliness, including proper use of sanitising solutions.
• Welcome guests with a personal greeting, escort them to their tables and ensure a seamless dining experience.
• Enforce health‑and‑safety, sanitation, fire and HACCP policies.
• Assist the supervisor/manager in supervising staff, controlling equipment and preventing loss.
• Identify and suggest operational improvements to enhance efficiency.
• Perform any additional duties assigned by the department head.

Required profile

• Relevant experience in food‑and‑beverage or hotel operations.
• Experience in restaurant or large‑scale hotel environments is an advantage.
• Strong time‑management skills, service‑oriented attitude and ability to work independently.

Required skills

• Knowledge of HACCP and food‑safety standards.
