Commis – Terrace Boulud (Kitchen)

About the role

Mandarin Oriental, Hong Kong is seeking a Commis for the Terrace Boulud kitchen. The role supports the Chef de Cuisine and Executive Pastry Chef in delivering high‑quality dishes in a Michelin‑starred environment, while upholding the hotel’s standards of service and hygiene.

Key responsibilities

• Prepare and maintain mise‑en‑place for all kitchen stations.
• Monitor and replenish par stock levels to ensure smooth service.
• Keep designated kitchen areas clean, hygienic, and compliant with health‑safety regulations.
• Inspect refrigerators, utensils, and equipment for cleanliness and proper functioning.
• Follow all food handling, production, portioning, and presentation standards.
• Assist senior chefs in the preparation and production of menu items.
