Director of Chinese Restaurant Operations

About the role

The Renaissance Harbour View Hotel seeks a dynamic leader to head Dynasty Restaurant, a premium Cantonese dining venue. Reporting to hotel senior management, you will shape the restaurant’s strategy, drive profitability, and ensure an authentic yet contemporary guest experience.

Key responsibilities

• Develop and execute the restaurant’s strategic direction in line with overall hotel objectives.
• Participate in hotel executive meetings and contribute to the broader Food & Beverage strategy.
• Lead continuous improvement initiatives and departmental transformation projects.
• Own profit and loss performance, driving revenue growth while maintaining cost controls.
• Identify revenue opportunities through menu engineering, promotions, and product mix optimization.
• Collaborate with the Executive Chinese Chef on menu innovation and seasonal offerings.
• Build relationships with corporate clients, VIP guests, and local business communities.
• Monitor guest feedback across Marriott channels, online platforms, and social media, implementing action plans to enhance satisfaction and online reputation.

Required profile

• Minimum 5 years of management experience in food & beverage, preferably within an international hotel group.
• Strong background in restaurant operations and financial management.
• Excellent communication, problem‑solving, and decision‑making abilities.
• Mature, flexible, hands‑on leadership style.
• Proficiency in English and Mandarin/Cantonese is advantageous.
