Restaurant Manager - Speciality

About the role

The Restaurant Manager – Speciality will lead day‑to‑day operations of a specialty restaurant within Mandarin Oriental, Hong Kong. You will be accountable for delivering the hotel’s high service standards, achieving financial targets and driving continuous improvement.

Key responsibilities

• Maintain smooth daily restaurant operations and administration.
• Collaborate with the Director of Operations, Executive Chef and Sous Chefs on service procedures, menu development, merchandising and promotional programmes.
• Ensure food quality, presentation and strict hygiene standards in line with HACCP requirements.
• Monitor guest feedback, handle complaints and drive continuous service improvement.
• Prepare and manage annual budget, labour forecasts and monthly financial performance, seeking cost efficiencies and revenue growth.
• Lead recruitment, onboarding, training and professional development for the restaurant team.

Required profile

• Minimum 5 years of relevant experience in hotel Food & Beverage, preferably with pre‑opening experience in a luxury property.
• Fluent in Cantonese, English and Mandarin with strong communication skills.
• Proven track record of achieving financial targets and maintaining high quality standards.
• Excellent leadership, interpersonal abilities and a passion for hospitality.
