Sommelier – Fine Dining Wine Specialist

About the role

Zuma, a leading contemporary Japanese restaurant in Hong Kong, is seeking a full‑time Sommelier to lead its wine program. The successful candidate will curate a wine list that enhances the restaurant’s modern Japanese cuisine and deliver exceptional table‑side service.

Key responsibilities

• Develop and maintain a curated wine list aligned with Zuma’s culinary style.
• Guide guests through wine selections, recommending pairings for each dish.
• Manage cellar organization, inventory control, and accurate record‑keeping.
• Train front‑of‑house staff on wine knowledge and upselling techniques.
• Host tastings and promote featured wines and pairing menus.
• Collaborate with the bar, kitchen, and management teams to ensure a cohesive beverage offering.

Required profile

• Proven sommelier expertise with strong wine‑pairing abilities for contemporary Japanese cuisine.
• Experience in wine sales and upselling within premium or fine‑dining environments.
• Solid background in food & beverage operations and guest engagement.
• Excellent communication skills for interacting with an international clientele.
• Relevant certification (e.g., WSET) or equivalent professional training is highly beneficial.
• Prior experience in luxury hospitality or high‑end restaurants, preferably with an Asian dining focus.
• Flexibility to work evenings, weekends, and holidays in a fast‑paced setting.
