Executive Chef – Bali & Hong Kong

About the role

Red Sauce Hospitality is seeking an Executive Chef to lead culinary development, opening and ongoing operation of new restaurants in Bali and Hong Kong. Reporting to the CEO, you will shape menus, build kitchen teams and ensure the highest standards of food quality and guest experience.

Key responsibilities

• Oversee menu creation, testing and execution for multiple concepts.
• Recruit, train and mentor kitchen staff, establishing SOPs and consistent kitchen systems.
• Develop supplier relationships, manage purchasing, inventory and food costing.
• Collaborate with restaurant General Managers and ownership to align kitchen and dining‑room operations.
• Drive commercial performance, monitoring food cost, labour, waste and productivity.
• Maintain a culture of discipline, consistency and continuous improvement.

Required profile

• Proven hands‑on leadership experience as an Executive or Head Chef.
• Deep expertise in Italian cuisine, with a strong understanding of tradition, ingredients and technique.
• Ability to build high‑performing teams from the ground up.
• Comfort working directly with senior leadership and owners.
• Entrepreneurial mindset focused on both creative excellence and financial discipline.
