Captain – Fine Dining Service

About the role

Mandarin Oriental The Landmark in Hong Kong is seeking an experienced Captain to lead a section of its award‑winning fine‑dining restaurant. You will ensure a seamless, high‑standard service experience for guests while supporting the Restaurant Manager in daily operations.

Key responsibilities

• Greet guests, take orders and deliver food and beverage according to hotel standards.
• Oversee the assigned dining section, ensuring smooth operation and coordination with the kitchen.
• Monitor back‑of‑house flow and manage the run of food between kitchen and dining area.
• Maintain high levels of customer satisfaction by responding promptly to guest needs.
• Assist the Restaurant Manager with training, scheduling and performance monitoring.
• Perform any additional duties assigned by the department head.

Required profile

• Minimum 3 years of experience in fine‑dining service, preferably in French or Michelin‑starred establishments.
• Strong communication and interpersonal skills, with a professional and presentable appearance.
• Fluent in English; additional language skills are a plus.
• Passionate about delivering exceptional hospitality.
