Cook – Happy Valley Clubhouse (Derby)

About the role

The Hong Kong Jockey Club is seeking a skilled Cook to work in the Happy Valley Clubhouse during Derby events. You will be responsible for preparing high‑quality dishes, maintaining kitchen standards, and supporting the Sous Chef and Chef de Cuisine.

Key responsibilities

• Be conversant with menu items, ingredients, preparation methods and presentation style.
• Maintain kitchen hygiene and cleanliness at all times.
• Set up your section as directed by the Sous Chef or CDP and ensure it is checked before service.
• Minimise food wastage and ensure food freshness and quality.
• Attend and understand pre‑function service briefings.
• Comply with Workplace Health & Safety and Occupational Health & Safety rules.
• Assist the Sous Chef in daily duties and perform any other tasks assigned by the Chef de Cuisine or Sous Chef.

Required profile

• Minimum of 4 years’ relevant experience in prestigious hotels or restaurants.
• Experience in all‑day dining, large‑scale coffee shop and banquet food production.
• Hygiene knowledge in HACCP.
• Proficiency in English is an advantage.
