Commis I – Indian Cuisine

About the role

Join the culinary team at Kowloon Shangri‑La, Hong Kong, as a Commis I specializing in Indian cuisine. You will support the kitchen in delivering high‑quality, authentic Indian dishes while maintaining the standards of a world‑class hotel.

Key responsibilities

• Prepare and present food according to established recipes, quality standards, and hygiene requirements.
• Manage daily food requisitions and assist with inventory and cost‑control processes.
• Support senior chefs in menu development, recipe creation, and promotional activities.
• Maintain a clean, safe, and organized kitchen environment, ensuring proper use and upkeep of equipment and utensils.
• Perform additional duties as assigned by the supervisor.

Required profile

• Minimum 4 years of experience in reputable hotels or restaurants, with at least 2 years in a similar commis role.
• Strong knowledge of Indian cuisine; familiarity with Southeast Asian cuisine is an advantage.
• Solid understanding of kitchen operations, food quality standards, cost control, procurement, HACCP, workplace safety, and team management.
• Excellent communication and interpersonal skills.
• Good command of spoken and written English.
