Commis – Garde Manger (Food Preparation)

About the role

The Commis – Garde Manger will support the kitchen team by preparing ingredients, cooking foods according to recipes, and maintaining high standards of hygiene and presentation. This full‑time position works on‑site at The Ritz‑Carlton in Hong Kong and follows the brand’s Gold Standards for service excellence.

Key responsibilities

• Prepare, portion, chop, wash, peel, weigh, measure and mix ingredients for hot and cold dishes.
• Operate kitchen equipment such as ovens, stoves, grills, microwaves and fryers safely and efficiently.
• Cook foods to recipe specifications, monitor quality, and test for proper doneness.
• Set up and break down work stations, serve portions onto appropriate receptacles, and maintain a clean, disinfected kitchen environment.
• Follow all safety, security and food‑handling policies, report incidents, and complete required training.

Required profile

• High school diploma or G.E.D. equivalent.
• At least one year of related kitchen or food‑preparation experience.
• No supervisory experience required.
• No specific license or certification required.

Required skills

• Food preparation techniques.
• Operating kitchen equipment (ovens, stoves, grills, microwaves, fryers).
• Knowledge of food safety and hygiene standards.
