Cook – Oriental Food (Racecourses)

About the role

The Hong Kong Jockey Club is seeking an experienced Cook to lead the Oriental Food outlet across its racecourse venues. You will be responsible for delivering top‑class service, maintaining high standards of hygiene, and supporting the kitchen team in a fast‑paced, high‑visibility environment.

Key responsibilities

• Inspect all kitchen areas, including pot and dish wash stations, for cleanliness, order, and proper stock rotation.
• Prepare sauces, stocks, and fish for the next service day.
• Manage daily mise en place according to supervisory guidelines.
• Ensure smooth, prompt, and high‑quality service to guests.
• Assist with food requisitions and troubleshoot kitchen issues, reporting unresolved problems to the supervisor.
• Provide on‑the‑job training, coaching, and development for junior cooks.
• Monitor food quality, adjust seasoning, and replenish dishes as needed.
• Minimise food waste and adhere to the food safety program.
• Support the supervisor in daily duties and comply with all health and safety regulations.

Required profile

• Minimum Form 3 (equivalent) education.
• At least 6 years of relevant experience in a large hotel or catering operation, including 2 years in a supervisory role.
• Strong knowledge of hygiene standards and HACCP principles.

Required skills

• HACCP implementation and food safety compliance.
