Director of Chinese Restaurant Operations

About the role

The Director of Chinese Restaurant Operations will lead Dynasty Restaurant, a premium Cantonese dining venue within a hotel, shaping its strategic direction and ensuring alignment with overall hotel objectives. Reporting to senior hotel leadership, the role combines operational excellence, financial stewardship, and brand development to deliver outstanding guest experiences.

Key responsibilities

• Define and execute the restaurant’s strategic plan, participating in hotel executive meetings and contributing to the broader Food & Beverage strategy.
• Own P&L performance, drive revenue growth, control costs, and implement profitability initiatives such as menu engineering and promotional programs.
• Maintain and enhance the restaurant’s market positioning as a leading Cantonese destination, collaborating with the Executive Chinese Chef on menu innovation and seasonal offerings.
• Develop business development initiatives, build relationships with corporate clients, VIP guests, and local businesses, and work with Sales & Marketing to maximise exposure.
• Monitor guest satisfaction through Marriott channels, online reviews and social media, and lead service recovery actions to protect the restaurant’s reputation.
• Lead departmental transformation and continuous‑improvement projects, fostering a hands‑on, flexible leadership style.

Required profile

• Strong background in Food & Beverage operations, preferably within an international hotel group.
• Minimum five years of senior management experience in a comparable role.
• Excellent communication, problem‑solving and decision‑making abilities.
• Mature, flexible, hands‑on leadership style with a focus on results.
• Proficiency in English and additional language skills as required.
