Sommelier – Blanc de Noirs (Fine Dining)

About the role

Mandarin Oriental The Landmark, Hong Kong is seeking a dedicated Sommelier – Blanc de Noirs to join its Food & Beverage Service team. The role focuses on delivering an exceptional wine and beverage experience across the hotel’s acclaimed dining venues, supporting both guest satisfaction and sales growth.

Key responsibilities

• Manage wine service and inventory, ensuring proper storage, aging rotation, and temperature control.
• Update beverage lists, maintain accurate sales records, and promote wine sales.
• Provide professional wine recommendations and service to guests in fine‑dining and bar settings.
• Train bartenders and service staff on beverage knowledge and service standards.
• Collaborate with the Director of Wine to align beverage offerings with the hotel’s luxury positioning.

Required profile

• Minimum two years of relevant experience in F&B or hotel wine service.
• Holder of a WSET certification.
• Experience in fine‑dining or Michelin‑starred establishments is preferred.
• Polished, service‑oriented, and able to work effectively in a team.
• Fluent in Cantonese and English; Mandarin is an advantage.

• Ability to train and mentor staff on beverage knowledge.
