Cook (Centurion) – Sha Tin Clubhouse

About the role

The Hong Kong Jockey Club is seeking a skilled Cook (Centurion) to join the culinary team at its Sha Tin Clubhouse. You will work closely with the Sous Chef and Chef de Partie to deliver high‑quality a la minute dishes for members and guests.

Key responsibilities

• Assist in supervising and coordinating the preparation and cooking of a la minute orders.
• Prepare daily requisitions for all required food items.
• Ensure all food is served according to established policies, guidelines, and recipes.
• Support the Sous Chef and Chef de Partie in developing new recipes, presentations, and food‑related promotions.
• Follow cost‑control policies and maintain accurate procurement records.
• Maintain cleanliness, proper handling, and maintenance of kitchen equipment, utensils, and work areas.
• Enforce safety and hygiene standards set by the Hong Kong Jockey Club.

Required profile

• Minimum of 3 years’ experience in fine‑dining restaurants at reputable hotels or clubhouses.
• Experience in Michelin‑starred operations is an advantage.
• Strong understanding of daily kitchen operations, cost control, procurement, HACCP, work safety, and employee matters.
• Creative knowledge of current food trends and ability to combine cuisines to develop new dishes.
• Willingness to continuously improve existing menu items.
• Location: Sha Tin Clubhouse, Hong Kong.
