Captain / Senior Server – Bar & Lounge / Brasserie

About the role

We are looking for a dynamic Captain / Senior Server to lead the Bar & Lounge and Brasserie team at Carlyle & Co. in Hong Kong. You will shape memorable dining experiences for our members, uphold the brand’s high standards, and support the restaurant manager in daily operations.

Key responsibilities

• Deliver exceptional food and beverage service, ensuring quality and consistency.
• Lead, coach and develop the service team with empathy and constructive feedback.
• Interact with members to gather feedback, build relationships and promote a welcoming atmosphere.
• Support the Restaurant Manager in operational tasks, maintaining productivity and service excellence.
• Maintain deep knowledge of drink menus, food pairings and service procedures.

Required profile

• Proven track record in restaurant operations in a similar senior role.
• Strong understanding of restaurant operating procedures and elevated yet informal service environments.
• Outstanding communication and interpersonal abilities to foster genuine relationships with members and staff.
• Fluent command of English.
