Cook – Derby (Happy Valley Clubhouse)

About the role

The Hong Kong Jockey Club is seeking a skilled Cook to join the Derby team at the Happy Valley Clubhouse. You will work in a high‑volume, prestigious catering environment, supporting the Club’s diverse food‑service operations and ensuring a consistently high standard of quality and presentation.

Key responsibilities

• Prepare and present menu items according to established recipes, ingredients, and presentation standards.
• Maintain kitchen hygiene, cleanliness, and compliance with HACCP and food‑safety programmes.
• Set up workstations and mise en place as directed by the Sous Chef or Chef de Partie.
• Monitor food freshness, quality, and minimise waste.
• Participate in pre‑service briefings and adhere to health and safety regulations.
• Provide courteous, professional service to guests and support overall Club operations.

Required profile

• Minimum of 4 years’ experience in reputable hotels, restaurants, all‑day dining, large‑scale coffee shops or banquet kitchens.
• Strong knowledge of HACCP principles and kitchen hygiene standards.
• Professional appearance and punctuality.
• Ability to work efficiently in a fast‑paced, team‑oriented environment.
