Cook (Non-Chinese Staff)

About the role

The Hong Kong Jockey Club is seeking an experienced Cook to join its large and diverse catering operation. This position focuses on delivering high‑quality dishes while maintaining strict hygiene standards for members, guests, and corporate clients across its clubhouses and racecourse venues.

Key responsibilities

• Prepare and present menu items according to established recipes and presentation style.
• Maintain kitchen hygiene, cleanliness, and proper tool storage; ensure stock rotation.
• Organise mise en place for the next service and minimise food waste.
• Taste and inspect food for freshness and quality before service.
• Set up workstations, attend pre‑function briefings and assist with food requisitions.
• Troubleshoot kitchen issues and report unresolved problems to the supervisor.
• Provide basic on‑the‑job training, coaching and development for junior cooks.
• Comply with Workplace Health & Safety, Occupational Health & Safety, HACCP and food‑safety programmes.
• Perform any other duties assigned by the supervisor.

Required profile

• Minimum 8 years of relevant experience in prestigious hotels or restaurants, including 2 years in a similar supervisory role.
• Knowledge of hygiene management systems and food‑safety standards is preferred.
• Ability to stay current with market trends and contemporary food presentation.
• Strong communication skills in Chinese and a collaborative attitude.
