Sous Chef - Western Cuisine

About the role

Disney is hiring a Sous Chef for its Western Cuisine kitchen on Lantau Island, Hong Kong. The role leads and manages kitchen staff, supervises kitchen activities in a hygienic and safe environment, and prepares elaborate dishes for multiple locations.

Key responsibilities

• Lead and manage kitchen staff and provide on-the-job training.
• Solve problems resourcefully and take control of difficult situations.
• Enforce sanitation regulations and safety standards.
• Promote teamwork and smooth cooperation between kitchens and outlets.
• Control food cost, quality, food hygiene and work safety according to Disney's standards.
• Maintain kitchen equipment and manage utensil inventory.

Required profile

• Experience in high-quality 4 and 5-star hotel and/or restaurant operations.
• Good leadership and organization skills, able to thrive in a fast-changing environment.
• People leader who can motivate the team to high performance.
• Fluent English; Cantonese and Mandarin preferred but not required.

Required skills

• Understanding of HACCP, general food sanitation and safety.
• Knowledge of food products and techniques.
• Familiarity with industry best practices.
