Sommelier – Terrace Boulud

About the role

The Sommelier for Terrace Boulud will lead the beverage service at Mandarin Oriental Hong Kong’s flagship restaurant. Working closely with the Beverage Director, you will ensure an exceptional wine and spirits experience for guests in a high‑end, Michelin‑star environment.

Key responsibilities

• Deliver a delighted bar and dining experience, providing professional wine and spirit recommendations.
• Maintain smooth and efficient operations in the bar areas, including order taking and service.
• Keep beverage lists up‑to‑date and record sales accurately.
• Monitor storage conditions, aging rotation and temperature of all stock in the beverage storeroom daily.
• Serve all beverage orders in accordance with proper procedures and standards.
• Provide on‑the‑job training and guidance to bartending staff.

Required profile

• Passion for wine and spirits with a strong service mindset.
• Ability to work collaboratively in a team that values integrity, respect and responsibility.
• Growth‑oriented attitude and willingness to continuously improve.
• Experience in fine‑dining beverage service and knowledge of wine list management.

Required skills

• In‑depth knowledge of wines, spirits and beverage pairings.
• Proficiency in inventory management, including storage, rotation and temperature control.
• Strong communication and guest‑service skills.
