Sous Chef / Chef de Partie – Fine Dining Restaurant

About the role

We are seeking a motivated Sous Chef / Chef de Partie to join our fine dining team at Harlan’s Bar & Restaurant in Tsim Sha Tsui, Hong Kong. The role involves menu planning, leading kitchen staff, and maintaining high standards of food quality and hygiene.

Key responsibilities

• Create a weekly menu plan with local and international dishes while adhering to the food‑cost budget.
• Train, supervise and lead kitchen staff to maintain high standards of food quality and hygiene.
• Fill in for the Head Chef when needed, managing menu planning and execution.
• Support kitchen operations, assist with food production, and follow up on daily production and food‑storage checks.
• Operate all kitchen equipment safely in accordance with safety guidelines.
• Ensure food quality and hygiene are maintained at all times.

Required profile

• Diploma or equivalent vocational training certificate; culinary school preferred.
• Experience in hotels or fine‑dining restaurants preferred.
• Knowledge of food portion control and food cost.
• Ability to work in a fast‑paced, demanding environment and follow instructions from the Operations Team.
• Passion for cuisine, strong team player, cheerful attitude and good communication skills.
• Proficiency in written and verbal Cantonese, English and Mandarin.
