Cold Kitchen Cook – Racecourse Operations

About the role

The Hong Kong Jockey Club is seeking an experienced Cold Kitchen Cook to support its catering operations at the Sha Tin and Happy Valley racecourses. You will work in a fast‑paced environment, preparing a variety of Asian dishes for members, guests and corporate functions.

Key responsibilities

• Prepare and present cold menu items according to established recipes and standards.
• Maintain kitchen hygiene, cleanliness, and proper storage of tools and ingredients.
• Organise mise en place for the next service, ensuring stock rotation and minimal waste.
• Conduct taste checks to guarantee freshness and quality.
• Assist with food requisitions and report any unresolved issues to the supervisor.
• Provide on‑the‑job training and coaching to junior cooks.
• Follow Workplace Health and Safety, Occupational Health and Safety, and HACCP food safety requirements.

Required profile

• Minimum 5 years of experience in an Asian restaurant, preferably in a club or hotel setting.
• Can‑do attitude with the ability to work efficiently in a high‑volume kitchen.
• Reliability, punctuality and a courteous, professional demeanor toward guests.
