Cold Kitchen Cook – Racecourse Operations

About the role

The Hong Kong Jockey Club is seeking an experienced Cold Kitchen Cook to support its catering operations at Sha Tin and Happy Valley racecourses. You will work in a fast‑paced environment, preparing high‑quality cold dishes for members, guests and corporate functions.

Key responsibilities

• Prepare and present cold menu items according to established recipes and standards.
• Maintain kitchen hygiene, cleanliness, and proper storage, ensuring tools are in good condition.
• Organise mise en place for the next service and control stock rotation.
• Taste and inspect food for freshness and quality.
• Minimise food waste and assist with food requisitions.
• Provide on‑the‑job training and coaching to junior cooks.
• Follow HACCP, workplace health and safety, and food safety programmes.

Required profile

• Minimum 5 years of experience in an Asian restaurant, preferably in clubs or hotels.
• Can‑do attitude and ability to work efficiently in a high‑volume kitchen.
• Punctual, courteous and professional interaction with guests and team members.
