Cold Kitchen Cook – Racecourses

About the role

The Hong Kong Jockey Club is seeking an experienced Cold Kitchen Cook to support its catering operations at the Sha Tin and Happy Valley racecourses. You will work in a fast‑paced environment, preparing a variety of cold dishes for members, guests and corporate functions.

Key responsibilities

• Prepare and present cold menu items according to established recipes and presentation standards.
• Maintain kitchen hygiene, cleanliness and proper storage, ensuring tools and equipment are in good condition.
• Organise mise en place for the next service, monitor stock rotation and minimise food waste.
• Taste and inspect food for freshness and quality before service.
• Assist with food requisitions, report any issues and support the supervisor in troubleshooting.
• Provide on‑the‑job training and coaching to junior cooks.

Required profile

• Minimum 5 years of experience in an Asian restaurant, preferably in a club or hotel setting.
• Can‑do attitude, punctuality and ability to work efficiently under pressure.
• Willingness to work in both Sha Tin and Happy Valley racecourse kitchens.

Required skills

• Knowledge of HACCP and food safety standards.
• Proficiency in food preparation and cold‑dish techniques.
