Stewarding Supervisor – Terrace Boulud

About the role

Mandarin Oriental, Hong Kong is seeking a Stewarding Supervisor for the Terrace Boulud venue. Reporting to the Restaurant Manager, you will lead the back‑of‑house stewarding team to ensure flawless handling, cleaning and storage of all service items while upholding the hotel’s high standards of hygiene and safety.

Key responsibilities

• Supervise daily stewarding operations, including washing, polishing and storing chinaware, glassware, silverware and related items.
• Conduct regular hygiene and cleanliness checks across all back‑of‑house areas.
• Ensure compliance with health, safety and fire regulations throughout the department.
• Oversee proper handling, storage and maintenance of stewarding equipment.
• Coordinate with kitchen and service teams to meet operational demands.
• Maintain accurate inventory records and report any discrepancies.

Required profile

• Proven experience in a stewarding or dishwashing supervisory role within a luxury hotel or fine‑dining environment.
• Strong attention to detail and commitment to health‑and‑safety standards.
• Ability to lead and motivate a team, fostering a collaborative and respectful workplace.
• Growth‑mindset with a willingness to continuously improve processes.

Required skills

• Knowledge of commercial dishwashing equipment and cleaning chemicals.
• Familiarity with local health and safety regulations for food‑service operations.
• Inventory management and basic record‑keeping abilities.
