Assistant Manager – Blanc de Noirs (F&B)

About the role

Mandarin Oriental The Landmark in Hong Kong is seeking an Assistant Manager for its Blanc de Noirs restaurant. You will support the Food & Beverage Manager in delivering a world‑class fine‑dining experience and uphold the brand’s high standards of service, quality and safety.

Key responsibilities

• Collaborate with chefs to develop menus and promotional programmes.
• Inspect front‑of‑house and back‑of‑house areas to ensure immaculate presentation.
• Maintain strict control of security matters, including keys to storerooms and staff lockers.
• Monitor food and beverage quality, handling guest and colleague complaints promptly.
• Oversee disciplinary procedures and ensure compliance with hotel standards.
• Organise daily staff briefings, training sessions and hygiene/fire safety lectures.
• Manage inventory levels, minimise breakage and wastage, and maintain agreed par stock.
• Track short‑term sales and labour cost variances by meal period and enforce budgetary controls.

Required profile

• Minimum 4 years of experience in food & beverage or hotel operations.
• Background in French fine‑dining or Michelin‑starred establishments is preferred.
• Passionate about delivering exceptional service and maintaining high standards.
• Professional appearance, pleasant demeanor and strong service orientation.
• Ability to work collaboratively in a fast‑paced, luxury environment.
